1 lb large shrimp, peeled and deveined

4 cups fresh spinach, washed and roughly chopped

3 tablespoons olive oil

4 cloves garlic, minced

1 medium lemon (juice and zest)

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

1/4 cup chicken or vegetable broth

Fresh parsley, chopped (for garnish)

Optional: cooked quinoa or rice

Instructions
 

Prepare the Shrimp: Rinse the shrimp under cold water and pat dry with paper towels. Season them lightly with salt and pepper.

    Cook the Garlic: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant but not browned.

      Add the Shrimp: Increase the heat to medium-high and add the shrimp to the skillet in a single layer. Cook for about 2 minutes on one side until they turn pink. Flip the shrimp over and cook for another 1-2 minutes until fully cooked. Remove the shrimp from the skillet and set aside.

        Sauté the Spinach: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped spinach and cook for about 2-3 minutes until wilted. Season with salt and pepper.

          Combine Ingredients: Return the cooked shrimp to the skillet. Pour in the chicken or vegetable broth, the juice and zest of the lemon, and stir everything together. Cook for an additional 2 minutes, allowing the flavors to meld together.
