Instructions

Marinate the Salmon:

In a bowl, whisk together lemon juice, olive oil, minced garlic, dill, parsley, salt, pepper, and red pepper flakes if using. Place salmon fillets in a shallow dish or a ziplock bag and pour the marinade over. Ensure the salmon is well coated. Marinate for at least 30 minutes, or up to 2 hours in the refrigerator for maximum flavor.

      Prepare the Dressing:

In a small jar or bowl, combine olive oil, lemon juice, Dijon mustard, honey, salt, and pepper. Shake or whisk until well blended. Set aside.

          Cook the Quinoa:

If you haven't already, cook your quinoa according to package instructions. Fluff with a fork and set aside to cool slightly.

              Grill the Salmon:

Preheat your grill to medium-high heat. Remove salmon from the marinade and place on the grill, skin-side down. Grill for about 4-5 minutes per side, or until the salmon is cooked through and easily flakes with a fork. Cooking time may vary based on the thickness of the fillets.

                  Assemble the Bowls:

In each bowl, start with a base of quinoa, followed by a handful of spinach or mixed greens. Top with diced cucumber, halved cherry tomatoes, sliced avocado, and crumbled feta cheese and olives if desired.

                      Add the Salmon:

Once grilled, place a salmon fillet on top of each bowl. Drizzle generously with the lemon herb dressing.

                          Serve:

Enjoy your Zesty Lemon Herb Grilled Salmon Bowls warm or at room temperature. They make a perfect nutritious lunch or dinner option!
