1 lb boneless, skinless chicken breasts, diced

1 cup jasmine rice

2 cups chicken broth

1 lime (zested and juiced)

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon cumin

1 teaspoon paprika

1 teaspoon chili powder

Salt and pepper, to taste

1 cup black beans, rinsed and drained

1 cup corn (fresh or frozen)

1 small red onion, diced

1 red bell pepper, diced

1 avocado, sliced

1 system lettuce (e.g., Bibb or Butterhead lettuce)

Fresh cilantro, for garnish

Additional lime wedges, for serving

Instructions
 

Cook the Rice: In a medium saucepan, combine jasmine rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender and the liquid is absorbed. Fluff with a fork and set aside.

    Sauté Chicken: In a large skillet, heat olive oil over medium heat. Add the diced chicken and cook for 5-7 minutes until browned and cooked through. Stir frequently to avoid sticking.
