1 lb (450g) shrimp, peeled and deveined

1 ripe avocado, diced

1 cup cherry tomatoes, halved

½ red onion, finely chopped

1 cup cucumber, diced

½ cup corn (fresh or canned)

1 lime, juiced

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon cumin

½ teaspoon chili powder

Salt and pepper to taste

Fresh cilantro, chopped, for garnish

Instructions
 

Prepare the Shrimp: In a bowl, toss the shrimp with olive oil, garlic powder, cumin, chili powder, salt, and pepper. Ensure the shrimp is evenly coated with the spices.

    Cook the Shrimp: Heat a skillet over medium-high heat. Add the seasoned shrimp and cook for about 2-3 minutes on each side, or until the shrimp turn pink and opaque. Remove from heat and let cool slightly.

      Mix the Salad: In a large mixing bowl, combine the diced avocado, halved cherry tomatoes, diced cucumber, chopped red onion, and corn.

        Add the Shrimp: Once the shrimp have cooled, add them to the salad mixture.
