1 cup grated zucchini (about 1 medium zucchini)

1 cup all-purpose flour

1/2 cup rolled oats

1/2 tsp baking soda

1/2 tsp baking powder

1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp salt

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1/3 cup vegetable oil or melted coconut oil

1 large egg

1 tsp vanilla extract

1/2 cup semi-sweet chocolate chips (optional)

1/4 cup chopped walnuts or pecans (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

    Prepare the Zucchini: Grate the zucchini using a box grater. Place the grated zucchini in a clean dish towel and squeeze out excess moisture gently. This will help prevent soggy cookies.

      Mix Dry Ingredients: In a bowl, whisk together the all-purpose flour, rolled oats, baking soda, baking powder, cinnamon, nutmeg, and salt until well combined.

        Combine Wet Ingredients: In a large mixing bowl, combine the brown sugar, granulated sugar, and oil until well mixed. Add the egg and vanilla extract, whisking until smooth.

          Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Do not overmix; it’s okay if some flour is visible. Fold in the grated zucchini and, if desired, the chocolate chips and nuts.

            Shape and Bake: Using a spoon or cookie scoop, drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten them slightly with the back of the spoon.

              Bake the Cookies: Bake in the preheated oven for about 12-15 minutes, or until the edges are lightly golden and the cookies appear set.
