Zucchini Cookies Chicken Skillet

1 lb boneless, skinless chicken thighs, diced

1 medium zucchini, grated and excess moisture squeezed out

1 cup rolled oats

1/2 cup almond flour

1/2 cup grated Parmesan cheese

1/4 cup honey or maple syrup

1 large egg

1 tsp vanilla extract

1 tsp cinnamon

1/2 tsp baking soda

1/2 tsp salt

2 tbsp olive oil

Optional: Chopped nuts or chocolate chips for added texture

Prepare the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced chicken thighs and season with salt and pepper. Cook for about 6-8 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

    Make the Cookie Mixture: In a large mixing bowl, combine the grated zucchini, rolled oats, almond flour, Parmesan cheese, honey (or maple syrup), egg, vanilla extract, cinnamon, baking soda, and salt. Mix until well combined. If desired, fold in chopped nuts or chocolate chips.
