Zucchini Lasagna Recipe Quesadillas for Kids

2 medium zucchinis, sliced thinly

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

4 large flour tortillas

2 tablespoons olive oil (for brushing)

Fresh basil leaves, for garnish (optional)

Instructions
 

Prep the Zucchini: Preheat the oven to 400°F (200°C). Spread the zucchini slices on a baking sheet, drizzle with a little olive oil, and sprinkle with salt. Roast for 10-15 minutes until tender and slightly golden. Remove from the oven and let cool.

    Mix the Cheese Filling: In a medium-sized bowl, combine the ricotta cheese, half of the mozzarella, Parmesan cheese, chopped onion, garlic, Italian seasoning, salt, and pepper. Mix until well combined.

      Assemble the Quesadillas: Lay one tortilla on a flat surface. Spread a generous layer of the cheese mixture onto one half of the tortilla. Add a layer of roasted zucchini on top of the cheese. Sprinkle some additional mozzarella on top and fold the tortilla over, pressing gently to seal.

        Cook the Quesadillas: Heat a skillet over medium heat and brush lightly with olive oil. Carefully place the quesadilla in the skillet and cook for about 3-4 minutes until golden brown. Flip and cook for another 3-4 minutes on the other side until the cheese is melted.

          Repeat: Repeat the assembly and cooking process for the remaining tortillas.

            Serve: Cut the quesadillas into wedges and serve warm, garnished with fresh basil leaves if desired.
