2 medium zucchini, sliced thinly

1 cup ricotta cheese

1 cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

2 cups fresh spinach

1 cup marinara sauce (store-bought or homemade)

1 clove garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

1 tablespoon olive oil

Fresh basil leaves for garnish

Prepare Zucchini: Start by preheating your oven to 375°F (190°C). Slice the zucchini lengthwise into thin strips; you can use a mandoline for even slices. Sprinkle salt on the slices and let them sit for about 15-20 minutes to draw out excess moisture. Pat dry with paper towels.

    Make Ricotta Mixture: In a medium bowl, combine the ricotta cheese, half of the mozzarella, Parmesan, minced garlic, Italian seasoning, salt, and pepper. Mix well until combined.

      Sauté Spinach: In a skillet, heat olive oil over medium heat. Add fresh spinach and sauté for about 2-3 minutes until wilted. Remove from heat and set aside.

        Assemble Salad Bowl: In a large bowl or individual serving bowls, layer zucchini slices, followed by a layer of the ricotta mixture, sautéed spinach, and a thin layer of marinara sauce. Repeat layers until all ingredients are used, finishing with a layer of marinara and topping it with the remaining mozzarella cheese.

          Bake: Place the assembled bowls on a baking sheet and bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and lightly golden.

            Garnish and Serve: Once done, remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.
