Zucchini Lasagna Rolls

4 medium zucchini, sliced thin lengthwise

1 cup ricotta cheese

1 cup mozzarella cheese, shredded (plus extra for topping)

1/2 cup grated Parmesan cheese

1 large egg

2 cups marinara sauce (store-bought or homemade)

1 teaspoon Italian seasoning (oregano, basil, thyme blend)

Salt and pepper, to taste

Fresh basil or parsley, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Zucchini: Slice the zucchini lengthwise into thin strips (about 1/8 inch thick). If the zucchini is watery, place the slices on a paper towel and sprinkle with a little salt. Let them sit for 10 minutes to draw out excess moisture, then pat dry.

      Make the Cheese Mixture: In a mixing bowl, combine the ricotta cheese, half of the mozzarella cheese, Parmesan cheese, egg, Italian seasoning, salt, and pepper. Mix well until all ingredients are fully incorporated.

        Assemble the Rolls: Spread about 1 tablespoon of the cheese mixture along the length of each zucchini slice. Carefully roll up the zucchini around the cheese mixture, starting from one end. Place the rolls seam-side down in a baking dish.

          Add the Sauce: Pour half of the marinara sauce evenly over the rolls in the baking dish. Sprinkle the remaining mozzarella cheese on top.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.

              Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh basil or parsley before serving.

                Enjoy: Serve hot, ideally with a side salad or some crusty garlic bread.
