Zucchini Pancake Tacos

2 medium zucchinis, grated

1 cup all-purpose flour (or gluten-free flour)

2 large eggs

1/2 cup milk (or plant-based milk)

1 tsp baking powder

1/2 tsp salt

1/4 tsp black pepper

1/2 tsp garlic powder

1/2 cup shredded cheddar cheese (or dairy-free alternative)

1 cup cooked black beans, rinsed and drained

1 avocado, sliced

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

Lime wedges for serving

Olive oil for cooking

Instructions
 

Prepare the Zucchini:

    - Grate the zucchinis using a box grater. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture.

      Make the Pancake Batter:

        - In a large mixing bowl, combine the grated zucchini, flour, eggs, milk, baking powder, salt, black pepper, and garlic powder. Mix until just combined. Fold in the cheddar cheese.

          Cook the Zucchini Pancakes:

            - Heat a non-stick skillet over medium heat and add a drizzle of olive oil. Once hot, pour about 1/4 cup of the zucchini batter onto the skillet for each pancake.
