2 medium zucchinis, sliced into 1/4 inch rounds

1 cup grated Parmesan cheese

1 cup breadcrumbs (or gluten-free breadcrumbs for a GF option)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs, beaten

Cooking spray or olive oil for greasing the baking sheet

Preheat the oven: Start by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray or olive oil to prevent sticking.

    Prepare the zucchini: Rinse the zucchinis and slice them into rounds, about 1/4 inch thick. Lay the zucchini slices out on a paper towel and sprinkle a little salt over them. Let them sit for about 10 minutes to draw out moisture. Pat the zucchini dry with additional paper towels to remove excess moisture.

      Create the coating mixture: In a medium-sized bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, dried oregano, salt, and black pepper. Mix well to ensure all the ingredients are evenly distributed.

        Prepare the egg wash: In a separate bowl, beat the two large eggs until well mixed.

          Coat the zucchini slices: Dip each zucchini slice into the beaten eggs, allowing any excess to drip off, and then press them into the Parmesan-breadcrumb mixture, ensuring they are coated evenly on both sides. Place the coated zucchini on the prepared baking sheet in a single layer.
