2 medium zucchini

1 cup grated Parmesan cheese

1 cup breadcrumbs (preferably panko for extra crunch)

1 teaspoon onion powder

1 teaspoon Italian seasoning

2 large eggs

Olive oil spray (or regular olive oil for brushing)

    Prepare the Zucchini: Wash and dry the zucchini. Slice them into thin rounds, about ¼ inch thick. To minimize moisture, lay the slices on a clean kitchen towel, sprinkle lightly with salt, and let them sit for about 15 minutes. This will help draw out excess water.

      Make the Coating: In a shallow bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix well to ensure an even distribution of spices.
