4 medium zucchinis

2 ripe avocados

2 cloves garlic, minced

1/4 cup fresh basil leaves

2 tablespoons lemon juice (freshly squeezed)

1/4 cup extra virgin olive oil

Salt and pepper to taste

1/4 teaspoon red pepper flakes (optional)

1/2 cup cherry tomatoes, halved (for garnish)

1/4 cup pine nuts, toasted (for garnish)

Instructions
 

Prepare the Zucchini Noodles: Using a spiralizer, julienne peeler, or vegetable peeler, create noodles from the zucchinis. Set aside in a colander to drain excess moisture.

    Make the Creamy Avocado Sauce: In a blender or food processor, combine the ripe avocados, minced garlic, fresh basil leaves, lemon juice, and olive oil. Blend until smooth and creamy. If the sauce is too thick, add a little water until you reach your desired consistency.
