Zucchini Pita Pizzas

4 medium zucchinis

4 whole wheat pita breads

1 cup marinara sauce (or pizza sauce)

1 cup shredded mozzarella cheese

½ cup sliced bell peppers (red, green, or yellow)

½ cup sliced black olives

½ cup baby spinach, chopped

1 teaspoon dried oregano

1 teaspoon garlic powder

1 tablespoon olive oil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Zucchini: Wash the zucchinis and slice them into thin rounds, about ¼ inch thick. Lightly sprinkle salt on the slices to draw out excess moisture and let them sit for 10 minutes. Pat them dry with a paper towel.

      Sauté the Zucchini: In a skillet, heat the olive oil over medium heat. Add the zucchini slices and sauté for about 5-7 minutes until they start to soften but are not fully cooked. Season with garlic powder, oregano, salt, and pepper. Remove from heat and set aside.

        Assemble the Pita Pizzas: Place the whole wheat pita breads on a baking sheet. Spread a generous amount of marinara sauce over each pita.

          Add Cheese and Toppings: Sprinkle shredded mozzarella cheese evenly over the sauce, then layer the sautéed zucchini, bell peppers, olives, and chopped spinach. Top with a bit more cheese if desired.

            Bake: Place the assembled pita pizzas in the preheated oven. Bake for 10-12 minutes, or until the cheese is melted and bubbly and the edges of the pitas are crispy.
