2 medium zucchinis, grated

1 cup shredded cheese (cheddar or mozzarella)

4 small whole wheat tortillas

1/2 cup corn kernels (fresh or frozen)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon paprika

Salt and pepper to taste

Olive oil or butter, for frying

Optional: salsa or guacamole for dipping

Prepare the Zucchini: Start by washing and grating the zucchinis. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out excess moisture. This step is crucial to prevent your quesadillas from becoming soggy.

    Mix the Filling: In a mixing bowl, combine the drained zucchini, shredded cheese, corn, garlic powder, onion powder, paprika, salt, and pepper. Stir until the ingredients are well blended, creating a colorful filling.

      Assemble the Quesadillas: Lay one whole wheat tortilla flat on a clean surface. Spread a generous portion of the zucchini filling over half of the tortilla. Fold the other half over the filling to create a half-moon shape. Repeat with the remaining tortillas.

        Cook the Quesadillas: Heat a non-stick skillet over medium heat and add a little olive oil or butter. Place one quesadilla in the skillet and cook for about 3-4 minutes, or until the bottom is golden brown and the cheese starts to melt. Flip carefully and cook the other side for another 3-4 minutes.
