Zucchini Sweet Roll Muffins

2 cups grated zucchini (about 2 medium zucchinis)

1/3 cup vegetable oil

1/2 cup unsweetened applesauce

1 cup brown sugar, packed

1 large egg

1 tsp vanilla extract

1 1/2 cups all-purpose flour

1 tsp baking powder

1 tsp baking soda

1 tsp ground cinnamon

1/2 tsp nutmeg

1/4 tsp salt

1/2 cup chopped walnuts or pecans (optional)

1/2 cup chocolate chips (optional)

For the glaze:

1 cup powdered sugar

2-3 tablespoons milk

1/2 tsp vanilla extract

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly with cooking spray.

    Prepare the Zucchini: Grate the zucchinis using a box grater or food processor. If they are particularly watery, gently squeeze out some of the excess moisture using a clean kitchen towel. Set aside.

      Mix Wet Ingredients: In a large mixing bowl, combine the vegetable oil, applesauce, brown sugar, egg, and vanilla extract. Whisk everything together until smooth and well-combined.

        Combine Dry Ingredients: In a separate bowl, sift together the all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Mix well to ensure there are no lumps.

          Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix.

            Fold in Zucchini and Optional Ingredients: Carefully fold in the grated zucchini, chopped nuts, and chocolate chips if using, ensuring they are evenly distributed throughout the batter.

                      Glaze the Muffins: Once the muffins are completely cooled, drizzle the glaze over the top of each muffin.
