2 medium zucchinis, shredded

1 cup russet potatoes, peeled and shredded

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (preferably panko for extra crunch)

1 large egg

2 green onions, finely chopped

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

Oil for frying (vegetable or canola)

Prepare Zucchini: Begin by shredding the zucchinis using a box grater or food processor. Place the shredded zucchini in a clean kitchen towel and squeeze out as much liquid as possible to prevent sogginess in your tater tots.

    Shred Potatoes: In a separate bowl, shred the russet potatoes. You can use the same box grater or food processor. No need to rinse as the starch helps bind the mixture.

      Mix Ingredients: In a large mixing bowl, combine the shredded zucchini, shredded potatoes, grated Parmesan cheese, breadcrumbs, egg, chopped green onions, minced garlic, onion powder, garlic powder, salt, and black pepper. Mix well until all ingredients are combined.

        Shape Tots: Using your hands, take a small amount of the mixture (about 1 tablespoon) and shape it into a small cylindrical form, like a mini log. Repeat until all the mixture is shaped into tater tots.

          Heat Oil: In a large skillet, add about 1/2 inch of oil and heat over medium heat. To test if the oil is ready, drop a small piece of the mixture in; if it sizzles, the oil is hot enough.

            Fry Tater Tots: Carefully place the shaped tater tots into the hot oil in batches, being careful not to overcrowd the pan. Fry for 3-4 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels to absorb excess oil.
